Salad should never be boring. There are so many wonderful greens available year-round and this combination is a winner. I substituted  shaved Manchego rather than Maytag, as most of my family is not a fan of blue cheese. I also substituted white balsamic vinegar for the apple cider vinegar suggested in the recipe, but it makes for a lovely presentation and the honeyed-nut garnish adds just the right sweetness and crunch.
