This recipe is flavorful and colorful. I recommend roasting the peppers in the oven, rather than on the flame as the recipe suggests, but either way, it is a nice way to jazz up a chicken dinner. My kids love sausage, so I sliced up 4 links of jalapeno-beef sausage and sautéed them along with the chicken in the cooking process.  You could easily substitute your favorite sausage and most would work quite well with the dish.  I used chicken breasts and legs as those are in highest demand in my house, but you could choose thighs and any combination you like.
