I used a couple of recipes to make this plate and it was very well received by the family. The halibut is gently poached to perfection with ginger-lemon notes that are just delicious with the sautéed leeks. The trick to the sweet potato fries is to dip them in the cornstarch-soda water marinade which gives them a crispier exterior and soft interior. I seasoned mine with smoky sea salt from Penzey’s and paprika– just delicious!
