I love these Asian noodles and if you were looking for some protein to add to this recipe, you could easily shred chicken from your favorite store-bought rotisserie chicken, but I think they are delicious just on their own.  The key is to get high quality asian noodles which are readily available in many stores now and be sure to prepare plenty of sauce.  They can be served cold or hot.  The Chinese sesame paste is not that readily available and does have a bit of a different flavor than regular sesame paste (tahini) as the sesame is roasted and not raw.  I have offered a suggestion for a substitute if going to one more specialty store is less than convenient.
