Love these delicious cookies that are perfect for holiday gatherings. They are chewy and soft and so delicious and a perfect companion to coffee or tea. Hope you love them!

Yield: about 18 large cookies
Ingredients:
- 2 1/2 cups flour
- 1 and 1/2 teaspoons baking soda
- 2 teaspoons ground ginger
- 2 teaspoons cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter (softened)
- 1/2 cup packed dark brown sugar
- 1/4 cup sugar
- 1/3 cup molasses
- 1 large egg
- 2 teaspoons pure vanilla
for rolling:
- 1/4 cup sugar
- 1teaspoons cinnamon
Directions:
Preheat oven to 350°F. Line two large baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt together until combined. Set aside.
Using a stand mixer fitted with a paddle attachment, beat the butter and both sugars together on high speed until creamy and combined, about 2 minutes. Add the molasses and beat until well incorporated . Then add the egg and vanilla extract and beat until combined, about another minute. 1 minute.
On low speed, slowly mix the dry ingredients and blend to combine. In a small bowl, combine the sugar and cinnamon.
Roll a heaping tablespoon of cookie dough into a ball. Roll each in sugar-cinnamon mixture and place on prepared baking sheets about 2 inches apart. Bake for 10-12 minutes or until edges start to set and cracks appear on top.
Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Sprinkle remaining cinnamon sugar on top of warm cookies. Enjoy!
