The good fortune of having the Carlsbad Strawberry Company at my doorstep is wonderful! These luscious strawberries inspired this recipe and are the perfect addition to these muffins. If you want really oversized jumbo muffins, you can divide batter among 10 muffin tins. You may need to adjust baking time and cook a little longer.

Yield : 12 muffins
Ingredients:
for muffins:
- 2 cups flour (I love Bob’s Red Mill Pastry flour)
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 2 teaspoons grated Orange zest
- 1 large egg
- 2 teaspoons vanilla
- 1 cup sugar
- 4 tablespoons unsalted butter, melted and cooled slightly
- 8 whole milk vanilla yogurt
- 1/2 cup buttermilk
- 1 1⁄2 cups diced strawberries, small 1/4 inch dice
for streusel:
- 1/3 cup sugar
- 1/4 cup all-purpose flour
- 3 tablespoons butter
- 1 teaspoon orange zest
Directions:
for streusel:
In a small bowl work all ingredients for streusel in between your fingers so mixture is crumbly and about the size of almonds. Place mixture in fridge while preparing muffins.
for muffins:
Preheat oven to 350 (convection works best). Line a muffin tin with 12 liners or spray with cooking spray. In a small bowl, combine sugar and orange zest and with your fingers,rub together the zest and sugar so zest is light orange and very aromatic. Whisk flour, sugar-zest mixture, baking powder, and salt in medium bowl until combined. In a 4 cup measuring cup, whisk, cooled, melted butter, egg, vanilla, yogurt and buttermilk until combined. Add wet ingredients to dry ingredients and mix by hand just until dry ingredients are absorbed. The batter will be thick. Fold in diced strawberries just until combined. Spoon batter into prepared muffin tin (if you are making the oversized muffins, the batter will more than fill each tin). Remove prepared streusel from fridge and gently press crumbs onto tops of muffins. Place muffins in center rack of oven. Bake muffins for 25-30 minutes or until light golden brown and toothpick or skewer inserted into center of muffin comes out clean. Remove from oven, allow muffins to cool for 5-10 minutes before inverting to a wire rack to cool completely. Optional to sprinkle with a little confectioners sugar. Enjoy!
