This beautiful salad was inspired by Malibu Farm, a wonderful restaurant in Malibu California. It’s so easy and fresh. Make sure you use great peaches. The creamy burrata is wonderful with the sweet summer fruit and peppery arugula. If you don’t love arugula, you can always substitute your favorite greens. Save the extra dressing for another salad.
Serves 4
Ingredients:
- 10-12 ounces Arugula
- 2 sliced peaches
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1/4 cup sesame seeds
- 1/4 cup sugar
shallot dressing:
- 1/4 balsamic vinegar ( a reduced vinegar works great, like Alessi
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 2 tablespoons finely minced shallots
- 2/3 cup extra-virgin olive oil
Directions:
In a small non -stick sauce pan, put the flame on medium and heat until sugar begins to caramelize and turn golden in the pan (this only takes a few minutes) and no need to stir. Add the sesame seeds and immediately remove from heat. Transfer to a sheet of parchment and allow to cool. In a large slacks serving platter or bowl. Combine all the ingredients for your salad. Whisk all the ingredients for your dressing. Once brickle is cooled, break it up in small pieces and toss over salad. Add enough dressing to your salad to lightly coat (reserving extra for another salad). Enjoy!
