Love this delicious vegetarian summer soup that from Flourishingfoodie. It is so easy to make and just delicious. The addition of coconut milk rather than cream adds great flavor and a nice substitute. If you use olive oil, rather than butter, the soup is a great vegan option without compromising on flavor. The whole family truly enjoyed it! I added some fresh chopped basil and chives to give it a bit more flavor right before serving, and garnished with some shaved carrot and zucchini on a cabbage leaf. I would recommend using 4 ears of fresh corn, and an additional zucchini for a chunkier soup.
