This vegetarian dish makes use of a summer harvest of vegetables. The dish can be a bit watery, so it is important to dry tomatoes a bit before baking and allow gratin to sit for several minutes before serving. The juices however are incredibly flavorful and a fine way to enjoy summer produce.

I continue to enjoy all your recipes! Keep up the good work! I do have a problem though. In an effort to organize them I seem to have “misplaced ” some of them.
