An especially delicious cake that is also beautiful. I am honestly not a great cake baker– most of my attempts result in a dry cake. This recipe, however, changed my baking fortune…When I saw the ingredients for this cake, I thought it would be perfect for my daughter’s 21st birthday as it combined all her favorite flavors. As she said, “it is me in a cake!!” It is a wonderful recipe and a truly gorgeous presentation. The freeze-dried strawberries in the frosting add a perfect concentration of flavor and color. Be sure to let your mascarpone and butter come to room temperature for the perfect consistency.
