My family looks forward to this soup every year and so do I! Thanksgiving just keeps on giving and this is a wonderful soup that gets its true essence from the rich stock made from the turkey bones and carcass. It is a shame to waste all that flavor, and making the stock is relatively simple and well worth your time. I love to serve this soup with Sweet Potato Love Knots and a nice glass of white wine. I have posted the rolls separately.
This version is from 2018. I added some parsnips to the mix and found it delicious. As alway, the key to any great soup is the stock!
