This salad was inspired by a delicious salad I enjoyed in Florida at Cuvėe30A near Watersound Beach.  It is a great first course for a dinner party and makes for an impressive presentation as well.  You have to start early for the tomatoes to roast properly, and it does have to be assembled at the last minute for serving, but well worth the effort as it is truly delicious.
