If you are a fan of Oreos, these cookies are for you! As much as I try to reduce my sugar consumption given all the health woes associated with sugar consumption, i still love baking and indulging in moderation in dessert and cookies have always been at the top of the list! I added some white chocolate chips to the batter and used mini Oreos rather than the regular size ones so the cookie chunks were a bit smaller, but regular size would work as well. These will be a favorite for my youngest son and will accompany me on our next road trip to visit him in college.

Yield : 15 – 18 cookies
Ingredients:
- 2 cups all purpose flour
- 1/2teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 stick softened unsalted butter
- 1/2 cup sugar
- 1/2 cup firmly packed light brown sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1/2 cup white chocolate chips
- 1 and 1/4 cup roughly chopped mini Oreo cookies
Directions:
Preheat oven to 350. Line 2 baking sheets with parchment paper. In a medium bowl, whisk the flour, baking soda, baking powder and salt and set aside.
In a large bowl using a a stand mixer fitted with a paddle attachment, beat the butter and sugars together until smooth and creamy and well combined. Add the egg and vanilla and beat on high speed until well combined, scraping down the sides as needed and beat to incorporate.
With mixer on low, add the dry ingredients to the wet ingredients and mix until combined. Next add oreo chunks and white chocolate chips and continue to mix until evenly distributed in the batter.
Roll cookie dough in about 11/2 tablespoons of dough per cookie and place 2 inches apart on the prepared baking sheets. Bake for 10-13 minutes or until set and centers begin to crack.
Remove from the oven and allow cookies to cool on the baking sheet for 5 -10 minutes before transferring to a wire rack to cool completely. Enjoy!
