If you are looking for a quick snack or post workout craving, these little bites may be just right. They are mildly sweet and an easy way to pack in a little nutrition and satisfy a craving on the go. They store well in the freezer or fridge and taste delicious. There are endless ways to tailor these treats by substituting different nuts, nut butters or sweetener. Thank you to my daughter Daphne for the inspiration!

A quick way to pack in some energy on the go!

Yield 15-18

Ingredients:

  • 1 cup extra thick oats (I love Bob’s Red Mill)
  • 10 whole dates pitted
  • 1/3 cup shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup walnuts
  • 1/3 cup honey
  • 3 tablespoons chia seeds
  • 1 teaspoon vanilla extract

Directions:

Place all ingredients except coconut in the food processor. Place shredded coconut on a plate. Pulse together to combine (10-20 times). Take a tablespoon or so of batter and roll in the palm of your hand, then roll in coconut. Place on a baking sheet and refrigerate for about 30 minutes. Enjoy!

Note: energy balls can be frozen or chilled and enjoyed for a couple of weeks.
