I love that you can assemble these salmon burgers early on in the day and allow them to set up in the fridge. They require only a few minutes of searing on a grill pan. The brioche bun is the best way to enjoy these burgers. I served mine up with some roasted sweet potato fries, but regular potatoes would be great as well.

Yield 2-4 burgers

Ingredients:

for salmon burgers:

  • 1 pound, skinless, boneless salmon
  • 1 tablespoon Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 egg, lightly beaten
  • Dash of Worcestershire sauce
  • 2 teaspoons favorite fish seasoning ( I used Seattle salmon rub from my favorite spice store in Seattle)
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped celery
  • 1 clove minced garlic
  • 1/4 cup minced parsley
  • Kosher salt and pepper
  • 1/2 cup fish Fry coating (I love slap ya mama)
  • 2 tablespoons butter or olive oil
  • vegetable oil for searing
  • Brioche buns for serving

for spicy sauce:

  • 1/2 cup mayo
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon fresh squeezed lemon juice
  • 2 tablespoons chopped pickled jalapeños
  • 2 tablespoons finely chopped scallions
  • Kosher salt and pepper

Directions:

for burgers:

In a small saucepan, heat oil or butter on medium heat and add onion, carrot, celery , garlic and parsley and sauté for about 5 minutes until tender. Add Worcestershire sauce and season with salt and pepper. Once cooled, place the veggies in food processor and pulse salmon 5-7 times so that it is in small chunks. Transfer to a bowl and add egg and all remaining ingredients. Divide the burgers in 2 to 4 equal patties (depending on your portion preference) shaping the mixture with your hands. Sprinkle to lightly coat with fish fry and place in fridge on parchment lined paper for 30 minutes or a few hours if you are preparing ahead.

Whisk all the ingredients for the sauce in a small bowl and store in fridge.

To cook the salmon burgers, heat a heavy bottom skillet or grill pan on medium high heat. Coat with a couple of tablespoons of vegetable oil. Place prepared chill burgers on the pan and sear on each side for about 4 minutes,flipping once. Serve burgers with sliced tomatoes, avocado and lettuce as desired and serve topped with spicy sauce on toasted brioche buns. Enjoy!
