I love that this dessert is created with just a few simple ingredients ! It’s pretty amazing! I love to serve this with a little bourbon whipped cream in individual ramekins. They make for a perfect serving and beautiful presentation. This is a great make-ahead dessert and if you are not a bourbon fan, substitute with a different liqueur or vanilla is just fine. I love the light airy texture of the mousse.

Serves 4
Ingredients:
for mousse:
- 4 ounces semisweet dark chocolate in small pieces
- 3 large eggs, separated
- 1 tablespoon water
- 3 teaspoons pure vanilla extract
- 1 cup heavy cream
- 2 tablespoons granulated sugar, divided
- shaved chocolate, for garnish
- berries for garnish
for bourbon whipped cream:
- 1 cup whipping cream
- 1 tablespoon powdered sugar
- 1 tablespoon bourbon
Directions:
for mousse:
Heat chocolate in a heavy bottom pan on the lowest heat, stirring after a few minutes until chocolate is smooth and melted. Remove from heat, and set aside.
Place egg yolks and 1 tablespoon of water in a medium heavy saucepan and cook over very low heat, whisking continuously until yolks begin to foam and thicken, being cautious not to let the eggs scramble (this will take several minutes) . Whisk in vanilla, and continue to whisk constantly, for another few minutes allowing sauce to thicken to the consistency of a hollandaise sauce. Remove from heat.
Fold the cooled melted chocolate into egg mixture and transfer to a mixing bowl.
Beat the whipped cream with the whisk attachment of your mixer until stiff peaks form adding 1 tablespoon of sugar toward the end. Fold the whipped cream into the chocolate mixture.
Rinse out your mixer and whisk the reserved egg whites and remaining tablespoon of sugar and beat egg whites until stiff peaks start to form. Fold egg whites into chocolate mixture until well incorporated. Divide mousse into 4 ramekins and spread evenly. Cover mousse with plastic wrap and refrigerate for several hours and up to 24 hours
for bourbon whipped cream:
Beat cream, powdered sugar and bourbon in a mixer with whisk attachment until thick and easy to spoon. Just before serving, dollop a large spoonful of whipped cream on mousse and then top with a few fresh berries and some shaved chocolate. Serve and enjoy!
