I love using these chia seeds to make a delicious pudding. Chia seeds are super healthy and are a great way to add protein and fiber to your breakfast. I like to use frozen bananas as it adds extra thickness to the consistency of the pudding. You can use room temperature as well but be sure they are super ripe. Yes have found the longer your pudding sits in the fridge marinating with the chia seeds, the thicker it gets as the chia seeds release their natural gel to thicken the milk. I love this healthy satisfying start to the day and it’s perfect after my yoga workout or run!

Any fruit works for this healthy start to the day!

Ingredients:

  • 1 1/4 cup almond milk
  • 1/4 cup chia seeds
  • 1 tablespoon honey
  • 2 teaspoons vanilla
  • 3 frozen overripe bananas
  • Fresh berries for serving

Directions:

In a large mixing cup whisk together almond milk, chia seeds, vanilla and honey. Cover with plastic wrap and refrigerate at least overnight. Remove from the fridge and in a blender place frozen bananas and half of pudding and process until smooth and creamy. Combine the frozen banana mixture with the remaining pudding and divide in serving bowls or cups. Top with your favorite fruit and granola or even cocoa nibs. Enjoy!
