This bread will have your kitchen smelling wonderful in no time! No mixer required and an easy recipe to share for breakfast or afternoon tea. I love using the brown sugar and cinnamon for a nice dark swirl in the middle of the bread. I like to glaze the bread after it cools. The glaze is optional, but a beautiful addition.

Yield one 9 x 5 inch loaf

Ingredients:

for bread:

  • 3 cups all purpose flour
  • 1 cup granulated sugar
  • 4 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups buttermilk
  • 1/2 cup canola oil
  • 2 large eggs
  • 2 teaspoons vanilla

for cinnamon swirl:

  • 2/3 cup light brown sugar
  • 1 tablespoon cinnamon

for glaze:

  • 1 cup powdered sugar
  • 2 tablespoons melted unsalted butter
  • 1-2 tablespoons milk
  • 1/2 teaspoon cinnamon

Directions:

Preheat oven to 350 degrees. Spray your bread pan with cooking spray and place on a baking sheet. In a large mixing bowl, prepare the bread batter by whisking together flour, sugar, baking powder, cinnamon and salt. In a large mixing cup, whisk together the wet ingredients: buttermilk, oil, eggs and vanilla until well incorporated. In a small bowl combine brown sugar and cinnamon until well blended and set aside. Pour wet ingredients into the flour mixture and stir until well incorporated and smooth with some lumps. Transfer approximately 2/3 of the batter into prepared bread pan and smooth with a knife. Then pour about two thirds of brown sugar mixture on top. Using a knife make deep swirls of brown sugar into batter. Top this layer with remaining batter and the remainder of brown sugar mixture on top, agin swirling with a knife. Bake in oven for 50 to 60 minutes until toothpick inserted comes out clean. Remove from oven and allow to cool for 10 minutes, then invert and transfer to cooling rack to cool completely. Mix ingredients for glaze and whisk with a fork, drizzle over bread. Slice and enjoy!
