Chai spice is the perfect host to these delicious cookies!  They are chewy and delicious and you can make plenty of chai spice for cookies and save the rest to sprinkle on your toast, granola or homemade bread.  These are the perfect cookies to enjoy with tea in the afternoon or for dessert!  Enjoy!

Ingredients:

for cookies:

  • 2-2/3 cups) unbleached all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. table salt
  • 2 tsp. cream of tartar
  • 1 cup unsalted butter, softened at room temperature
  • 1  cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs

for rolling cookies:

  • 1/4 cup granulated sugar
  • 2 1/2  tablespoons chai spice

for chai spice:

  • 1 tablespoon cardomom
  • 1 tablespoon allspice
  • 2 tablespoons cinnamon
  • 1 tablespoon ground cloves
  • 3 tablespoons ginger

Instructions:

In a small bowl, combine all ingredients of chai spice mixture.  (You will have extra, but reserve to add to granola or yogurt or for another batch of cookies or bread.) Preheat oven to 325 and place rack in the center of the oven and heat the oven. Line a baking sheet with parchment paper.  In a medium bowl, whisk the flour, baking soda, salt, and cream of tartar to blend. Using a stand mixer with the paddle attachment, beat the butter and sugars on medium speed until light and fluffy and quite creamy, scraping down the sides as needed.  Beat in the eggs one at a time until thoroughly combined.  With the mixer on low speed,  blend in the flour mixture until incorporated, about 30 seconds.  In a small bowl, mix the chai spice with the sugar. Roll a heaping tablespoon the dough in the palm of your hand and roll  into the chai spice-sugar mixture to coat. Set the coated balls of dough about 3 inches apart on prepared sheets. Bake until golden brown on the edges and slightly soft in the center, about 15 minutes. Let the cookies cool on the sheet for a couple of minutes before transferring to a cooling rack to cool completely.
