I never tire of salad, especially in the summertime. This salad is so beautiful and fresh and such a wonderful complement to a summer meal. I love the combination of mint with the strawberries and saltiness of the crumbled feta. The avocado adds the perfect amount of creaminess to the salad and it is topped with a balsamic drizzle and extra virgin olive oil. This salad proves that simple is often the most delicious when it comes to food.
Serves 4-6
Ingredients:
- 12 oz mixed baby greens
- 1 cup thinly shaved red cabbage
- 4 oz roughly chopped kale, stems removed
- 15 strawberries, hulled and halved
- 1-2 avocados, sliced
- 1 cup crumbled feta
- 1 bunch torn mint leaves
- Kosher salt and pepper, to taste
- 1 teaspoon garlic powder
- 1-2 tablespoons Alessi balsamic glaze reduction
- 3 tablespoons olive oil
- Juice of 1/2 lemon
