I never tire of salad, especially in the summertime. This salad is so beautiful and fresh and such a wonderful complement to a summer meal. I love the combination of mint with the strawberries and saltiness of the crumbled feta. The avocado adds the perfect amount of creaminess to the salad and it is topped with a balsamic drizzle and extra virgin olive oil. This salad proves that simple is often the most delicious when it comes to food.

Serves 4-6

Ingredients:

  • 12 oz mixed baby greens
  • 1 cup thinly shaved red cabbage
  • 4 oz roughly chopped kale, stems removed
  • 15 strawberries, hulled and halved
  • 1-2 avocados, sliced
  • 1 cup crumbled feta
  • 1 bunch torn mint leaves
  • Kosher salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1-2 tablespoons Alessi balsamic glaze reduction
  • 3 tablespoons olive oil
  • Juice of 1/2 lemon
  • Directions: Spread greens on large, rimmed platter. Add kale and shaved cabbage and top with strawberries and crumbled feta. Disperse mint leaves around the salad evenly and fan out avocado on either end of platter. Just before serving, sprinkle with salt, freshly cracked pepper and garlic powder. Drizzle balsamic and lemon over leaves followed by olive oil. Lightly toss salad and enjoy immediately.
