For this dish, I used Italian farro. It has a lovely nutty flavor that works so well with the other mediterranean flavors in this hearty dinner salad. You could easily substitute another grain of preference like bulgur or quinoa if you prefer. Its easiest if you do all the chopping of vegetables and assembly of salad first and save tuna grilling for last. Drizzle vinaigrette over the whole thing just before serving!
You can replace the meats with tofu, tempeh, or seitan and replace the eggs with avocado for a healthy and cruelty-free meal!
