This recipe is healthy and delicious and uses roasted eggplant strips to roll up the ground turkey and ricotta.  It’s lighter than a traditional pasta and the pesto flavored ricotta spread is a wonderful combination with the turkey and eggplant.  When picking your eggplants, look for eggplants that are as even as possible width-wise so you can prepare your eggplant strips most effectively.  I served this with an orzo pilaf and a beautiful fresh salad.  My youngest son who claims not to enjoy eggplant really loved this dish!  It’s always a coup to turn on one of my diners to a healthy dish that they don’t expect to love!
