The roasted vegetables in this quinoa dish bring all the flavor and make a terrific addition to any buffet table or picnic. I used a combination of fresh herbs to brighten the dish and make it a perfect accompaniment to meat, poultry, fish, or as a stand alone vegan/vegetarian entrée. It also tastes great tossed in a green salad.
