A vegetarian burger that is infused with wonderful south of the border flavor and some sautéed vegetables that make the this vegetarian delight a bit more interesting. I have found that pulsing the beans with the quinoa in the food processor helps to bind the patties more effectively. I also like to use a ring mold to shape my burgers so they cook in a uniform fashion and make for a really nice presentation. If you don’t have a ring mold, you can use an empty can to help shape, a burger mold or your hands. Serve these burgers topped with your favorite sliced vegetables and a side of baked sweet potato fries for a delicious and healthy meal.
