This salad makes for a dramatic presentation and is a perfect opportunity to use all your creative energy in assembling  a colorful, healthy and delicious platter that has a little something for everyone.  The presentation is most impressive when you use a large platter which lends itself beautifully to a gorgeous display. to feature a rainbow of color and flavors..  The best thing about this kind of salad is the ability to substitute different elements.  If you don’t like brusselsprouts, use broccoli, yellow beans can be replaced by yellow squash or bell peppers.  There are so many possibilities.  I would recommend preparing all the raw ingredients first and then prepare the shrimp last.  The salad can be served at room temperature or cold.  I was so flattered that his salad was featured on the Cooking Light Instagram feed on March 30th.
