Salads are so versatile and adaptable to the best spring ingredients.  I absolutely love fave beans and was fortunate enough to find them at my local market.  If you can’t find this seasonal ingredient, you could easily substitute edamame in this salad.  I included some fresh mint for an extra taste of spring and some delicious raspberries.  The colors are beautiful and the sweet honey-dijon vinaigrette is a wonderful complement to all the flavors.
