This soup is full of vegetables and relies on potatoes for its creamy consistency. I roasted some sweet golden beets for a hint of natural sweetness and a drizzle of balsamic glaze is added right before serving. I like to roast the broccoli first and then add it to the vegetables as I think the flavor is a bit more complex. The peas are included right at the end of the cooking process for some added natural sweetness and a color booster. Make extra beets as they are wonderful to snack on!
