These beautiful kale greens that served as the inspiration for this salad were the gift of some good friends (who are shortly going to be my daughter Daphne’s future inlaws). I added some more greens and veggies and paired it with this delicious asian-inspired dressing for a most fresh and heathy salad. If youdoo’t want to chop the kale, I find that giving it a good rub down/massage helps to soften the leaves by breaking down the cellulose. It makes for a very nice texture that holds up well to the dressing.
