This brunch offering brings together lots of healthy vegetables in a stack of Mexican flavors and looks and tastes delicious. I used a ring mold to cut the tortillas, so they were in a perfect round. While that does leave you with some extra tortillas, There is no need to waste them. Just bake them and use them as a crouton in a salad or soup. I used the same ring mold to shape the fried egg, so everything stacked up neatly. The black bean purée and cheese helped bind the stack together.
