A winter salad that is full of gorgeous color, flavor and nutrition.  Why massage your Kale?  Kale is all the rage for some time now and you may have seen it advertised on some menus as “massaged.”  This may seem like and excessive unnecessary exercise, but it goes a long way to making the kale palatable.  By rubbing the kale between your hands, it breaks down the cellulose in the leaves and renders a tender, more silken, dark green leaf that works so well in this salad.  The nutty red quinoa adds some great texture and taste to the salad and the seasonal blood orange is not only beautiful , but adds a lovely citrus flavor.
