This was one of Bon Appetit’s most popular recipes in 2017 and is a great weeknight meal option for a busy family. I purchased a beautiful hand-forged carbon roasting pan from Blanc Creative that goes from stove-top to oven and sautées food perfectly. It was the ideal pan for this dinner and goes from stovetop to oven to serving. I adjusted the recipe a bit, by Adding some onion and garlic to the mix, Akon with a bit of oregano, and had I to extend the cooking time and temperature slightly from the original recipe, but loved the simplicity of the one skillet preparation. It’s definitely a worthy and cozy winter recipe.
