I am a huge fan of ginger and just love the infusion of ginger flavor in this granola recipe.  I have packed in plenty of nuts as well which makes it super delicious to top your hot breakfast cereal, yogurt or fruit or simply for snacking.  I find my crystallized ginger in the bulk section of my local market. For this breakfast bowl, I included my extra thick slow cooked oatmeal, yogurt and fresh fruit– the perfect hostess for this healthy breakfast!
