Weekends are a perfect time to prepare this healthy breakfast. Shakshuka are eggs poached in a sauce (usually a spicy tomato sauce) that and it is a dish popular in North Africa and middle eastern countries. I included some tomato in my version, but made it more green than red and added a parsley sauce and tomatoes along with pickled red onions which are incredibly easy to make in about 30 minutes. The pickles taste great with eggs and even in sandwiches. Toast some bread to serve alongside and delicious breakfast is served!
