This soup is adapted from Saveur magazine. It is a soup from the northern region of Italy, Lucca and it is especially wonderful as it is so adaptable to whatever vegetables you have on hand and it is easy to add or remove a vegetable and add the seasonings, herbs that please you. The base of the beans is the perfect palette to ket your creative cooking taste buds to shine,. It is naturally vegan and full of wonderful nutrients. In short, a perfect choice for winter days and by all means serve with crusty bread! I grilled mine with a bit of olive oil and rubbed it with fresh garlic and sprinkled with oregano.
