We are so lucky to have access to locally caught gulf shrimp in Florida. Buddy’s 30A, just a mile down the road always inspires me to cook something worthy of the high quality of the catch. This pasta is so healthy and packs in a lot of vegetables that add great flavor without overpowering the seafood. You could easily add or substitute scallops. If you are not interested in doing a few dishes, this meal may not be for you, but you could always enlist helpers who would more than likely be willing after serving such a delicious entrée! Serve with a beautiful salad and bread and you will have lots of smiles around the table.
