Salads continue to be some of my favorite things to create as they are so healthy and are so accommodating to great flavor, color and nutrition. I began this January with the traditional black-eyed peas which is a fixture in southern cooking for New Years. It was a great way to incorporate some legumes and some seasonal flavor into the salad along with the rest of the rainbow of both cooked and raw vegetables. You will feel so good preparing and enjoying this healthful and rejuvenating salad that is loaded with nutrients to keep you healthy and strong. I used a simple balsamic vinaigrette for the salad, but any dressing would work beautifully.
