Although it’s winter, it doesn’t mean you can’t make a delicious, healthy and seasonal salad that infuses great color to your meal as well as incredible taste and nutrition. The persimmons, pomegranates and blood oranges are in peak season right now. I think shaving the vegetables is somewhat essential to enable the flavors of the salad not to over power one another. You can use a mandolin or hand shaver. The color of the dressing is rich in color and just perfect with the salad. Next time, I may add some toasted walnuts as well. I think you will really enjoy beautiful simplicity of this gorgeous tasting salad.
