I love soups, especially when the weather gets cold and this seasonal offering is so delicious and unusual in flavor. I love the addition of miso and tahini along with the he sesame oil. I used leftover short grain brown rice for my soup which is a little starchier than long grain and worked perfectly. The kale and rice provide texture and the squash is so naturally creamy, it’s irresistible and provides such a beautiful, earth color.
