This Sauce is so healthy and delicious with all the creaminess of an Alfredo Sauce, but completely vegetable based. By roasting the cauliflower, onions and garlic to start, I created a creamy flavorful base for the sauce which is diluted with vegetable broth. The tomatoes, peppers and peas build on that base and a touch of basil is an ideal finish. If you like a bit of heat, crushed red pepper is a nice finish.
