The combination of the tomatoes, peppers and seared shrimp are a perfect combination any time of year. This soup is deceptively creamy, although the only dairy is the addition of a slight bit of yogurt crema at the very end. I use Campari tomatoes as they tend to be very ripe and flavorful throughout the year. A little bit of bread helps to thicken the soup and give it a great texture and body. The addition of vodka takes a little bit of the acidic bite out of the soup. It is not essential, but works quite well in balancing the flavor. Seared shrimp is the perfect complement to the tomatoes as a finishing touch.
