I am fortunate to have access to wonderful fresh seafood. This Pilaf would work equally well with chicken or even on a green salad. It is quite versatile and has wonderful Mediterranean flavors and is super healthy. If you are not a fan of bulgar wheat, Quinoa, brown rice, farro or another grain would be an easy substitute.
