This hummus whims with the classic ingredients of dried chickpeas and tahini. The addition of roasted butternut squash adds a wonderful earthy flavor and naturally creamy consistency. Curry is a natural complement to all these flavors. I like to start with dried beans as I think the hummus has a better consistency and using the boiling water from the chickpeas adds additional richness to the hummus. In short, this appetizer tastes like fall and make it a perfect, healthy way to enjoy delicious natural, vegan food. It makes a great sandwich spread as well!
