There are so many delicious earthy root vegetables available in the market which provides the perfect opportunity for a great, healthy, autumn soup. If you have not tried Za’tar, it is a wonderful middle eastern spice that works so well with all these vegetables. I like to roast the vegetables first and then braise them in the vegetable broth to help some of the natural sugars caramelize in the roasting process. I did use a bit of dairy in my soup, but this soup could easily forgo that indulgence if you preferred a vegan soup.
