The creamy quality of risotto makes it a wonderful base for this comforting food. I use chicken thighs which ensures that the chicken doesn’t dry out in the baking process. The risotto does take some tending to during the cooking process, but well worth it. I used a Mediterranean – like seasoning for the chicken, but you could substitute a Greek or Italian mixture. I did not add grated Parmesan cheese to mine, but it would be a delicious addition to the meal.
