A make-ahead pasta that sneaks in lots of healthy veggies and works well for a busy family great as a make-ahead meal. I love using kale instead of spinach as it has less water and holds up well in a baked dish. It does require some extra chopping but well worth it. The ricotta helps bind the pasta and adds a creaminess without being overly heavy. If you wanted a vegetarian version, simply eliminate the Pancetta. Reheat just before before serving for best results!
