Love this seasonal autumn salad with wonderful earthy flavor and color that is simple and unique. The addition of roasted vegetables adds natural sweetness to this dish and combines so nicely with the peppery Arugula. You can roast the vegetables ahead of time and serve them on salad at room temperature. If you prefer a vegan version, eliminate the cheese.
This was delicious! I also roasted mushrooms. The last 15 minutes. And added some olives brined with red pepper flakes.
