Creating a salad like this one is a great way to pretend I am back in a french bistro leisurely enjoying a lovely lunch at an elegant Paris Bistro. These salads make such a beautiful presentation and you can add or eliminate any vegetable that appeals to your taste. I selected a wide array of color for maximum nutrition and color impact. I love how french cuisine is so attentive to aesthetic, even if ingredients are simple ~ the flavor is always the other critical component. Use a large platter if possible so you can maximize the impact of the display. For the dressing, I made a basil-mustard vinaigrette – a wonderful complement to all these vegetables.
