This soup is incredibly healthy and although it is vegan, there is no sacrifice of flavor or taste.  It has a wonderfully creamy consistency and the addition of Thai curry paste gives the soup wonderful depth and some heat which is so delicious with the natural sweetness of the carrots and roasted bell peppers.  Don’t leave out the fresh herbs and garnishes to finish the soup –they provide an essential bright flavor at the end of each spoonful.
