This recipe was inspired by a recipe I saw in the New York Times.  All the flavors are a taste of fall and so healthy and delicious.  It does require a lot of kale, and a few steps, but worth the effort.  If you don’t want to stick to vegetarian, you can easily serve with some chicken.  I marinated my chicken in a sweet curry and smoked paprika blend for the benefit of the boys, but the pasta is perfect on its own. The colors, flavors are truly just right if you are searching for a healthy’ seasonal recipe to add to your repertoire.
