I love the flavors of this delicious orzo side dish that is loaded with summer vegetables and fresh dill. The orzo can easily blend with so many flavors while allowing the fresh vegetables to take center stage. Toasting the orzo before adding liquid insures that the pasta retains its integrity as it cooks. I added some mozzarella as well, but you could easily omit if you preferred a dairy-free version.
Serves 6 as a side dish.
